Collection: KORIN SHIRO 1 BY MASAMOTO

Fruit de la collaboration entre Masamoto et Korin, nous sommes fiers de présenter cette collection de couteaux forgés entièrement à la main par les meilleurs artisans et affûteurs du Japon.

La lame est forgée à partir d'acier blanc n°1 (shiro-ichi), l'un des aciers les plus difficiles à travailler, très proche du fameux "tamahagane", utilisé pour la forge des katanas traditionnels. Le résultat est une lame d'un tranchant exceptionnel pour une grande fluidité de coupe. Les caractères japonais gravés sur le saya (rensei kouha mikakusho) indiquent que le couteau possède un tranchant remarquable mais qu'il permet aussi de participer à l'élaboration d'une  cuisine exceptionnelle et d'améliorer les goûts des aliments dans l'assiette. Pour atteindre à la perfection, chaque lame est finalisée et affûtée par Maître Mizuyama en personne.

Le manche : le manche octogonal en magnolia est assorti d'une virole et d'une bague en corne de buffle d'eau, pour assurer une bonne et agréable prise en main.  Deux bagues en bois de Bubinga viennent souligner l'ensemble. Le Bubinga est un bois africain utilisé au Japon dans la fabrication des tambours taiko et autres instruments utilisés dans les cérémonies et festivals Shinto

Kizuna : le caractère 絆 gravé en rouge sur la lame, la virole, le saya, se lit  kizuna, ce qui signifie le lien. Le but ultime des artisans qui créent ces magnifiques couteaux est de véritablement forger un lien entre eux et les Chefs qui utilisent leurs créations.

Forging the Bond We are honored and excited to announce Masamoto's first ever knife collaboration with Korin. These knives are expertly forged and crafted by the very best blacksmiths and edge crafters in Japan and are 100% hand-made.

The Blade: Forged from Shiro-ichi, one of the most difficult types of steel to work with, this steel is very close to a tamahagane, which is used for traditional samurai sword forging. The resulting blade has superior edge retention and a fluid cutting feel. The Japanese characters, written on the saya cover (Rensei kouha mikakusho), allude to the knife having not only superior edge retention, but also creating beautiful cuisine and enhancing the flavor of the food on the plate. To ensure perfection, each blade is hand finished and sharpened by Master Mizuyama himself.

The Handle: The magnolia, octagonal handle is fitted with water buffalo horn on the bolster and butt cap to ensure a comfortable feel in the hand. The two dark wooden bands are crafted from Bubinga wood, an African hardwood. Bubinga is regarded as a wood imbued with spirituality and is used in Japan to make wadaiko drums and other instruments used in Shinto ceremonies and festivals.

Kizuna: The red kanji stamp on the blade of the knife, kizuna, is the Japanese word for 'bond' or 'connection'. The goal of the craftsmen who make these knives is to truly forge a bond between themselves and the chefs who use these knives.
